SEMOLINA HALVA

INGREDIENTS
½ cup unsalted butter, softened
2 cups fine semolina
½ cup slivered almonds, optional
SYRUP

2 ¼ cups sugar
7 cups water
2 cinnamon sticks
Juice of 1/2 lemon
METHOD

IN a saucepan add water, sugar, cinnamon sticks and lemon juice. Stir over medium heat to dissolve and allow to simmer for 5 minutes. Take off heat.
MELT butter over medium heat in a saucepan.
ADD semolina to melted butter and stir continuously until browned well (approximately 10 minutes)
ONCE semolina turned a light brown, slowly pour in the syrup (after removing the cinnamon stick) and continue to stir until the syrup has been absorbed and starts to thicken.
POUR halva into serving bowls and allow to rest for 5 minutes before enjoying. It can be eaten hot or cold !!
