KLEFTIKO

slow cooked lamb parcels 

INGREDIENTS FOR LAMB
2kg lamb pieces, on the bone

5 onions, thickly sliced

5 garlic cloves, chopped

oregano, to taste

juice of two lemons

salt, to taste

pepper, to taste

METHOD FOR LAMB

Preheat oven to 160 degrees

Mix all ingredients together in a bowl.

Wrap a couple of pieces of lamb with onions in parchment paper and foil.

Repeat process until they are all wrapped.

Place in oven and cook for 3 hours or until pulling apart.


INGREDIENTS FOR SAUCE

1 cup oil

2 large onions, chopped

3 cloves garlic, chopped

4 cinnamon sticks

4 bay leaves

salt, to taste

pepper, to taste

oregano, to taste

500gms chopped tomatoes

1 bottle tomato puree

3 tablespoons tomato paste

1/2 teaspoon sugar

METHOD FOR SAUCE

Place olive oil, onions and garlic into a saucepan on medium heat until they become transparent.

Then add the tomato paste and fry off. 

Add remaining ingredients and simmer for 20 minutes until sauce has thickened.

INGREDIENTS FOR RICE

2 cups Aborio rice

2 tablespoons olive oil

4 1/2 cups water, hot 

1 teaspoon vegetable stock

METHOD FOR RICE

Add oil and rice to saucepan and place on medium heat, add hot water and vegetable stock.

Mix water through, and allow to simmer for 13-15 minutes.

(Once water has been absorbed, rice is ready)

Let rice stand for 5 minutes and then fluff up with a fork.
