GIOUVARLAKIA AVGOLEMENO

meatball soup with egg lemon sauce 

INGREDIENTS 

 

500gms beef mince  

1 cup medium grain rice

1 large onion, chopped fine

½ bunch flat leaf parsley, chopped fine 

1 egg

Salt, to taste

Pepper, to taste 

2 tablespoons olive oil

½ cup water

 

INGREDIENTS FOR AVGOLEMONO – egg lemon sauce 

3 eggs

2 lemons, juiced

½ cup water 

 

METHOD 

 

START by preparing meatballs

PLACE mince meat, rice, onion, parsley, egg, salt, pepper and olive oil into a bowl and combine

ROLL the same size balls, wetting hands in-between with water to prevent mixture from sticking to your hands

FILL a large pot ¾ way with water and season with ½ cup oil, salt and pepper to taste

Put on medium heat and place meatballs into water.

PLACE lid on saucepan and bring to a boil.

REMOVE lid and allow soup to simmer for 25-30 minutes.

Taste for salt, if it needs any more, add now. 

TAKE off heat and now it’s time to prepare the avgolemono 

WHISK 3 eggs lightly, add lemon juice and 1/2 cup water 

SLOWLY add two ladles of soup into avgolemono mixture whilst continuously whisking

ONCE it’s ready slowly pour into soup pot.

Now its time to enjoy with your loved ones.
